Thanks to the letters and recipes you'd shared with us over the years, we got the idea of bringing it all together into one special Christmas cookbook, full of memories, tips and of course, tried & true recipes. Eggnog Bread
Sift together 2 1/4cup all purpose flour, 3/4 cup sugar, 1 tbsp baking powder, 1 tsp salt, and 1/2 tsp nutmeg. Set aside. In a separate bowl, blend together 1 1/2 cup eggnog, 1/2 stick butter, melted, and 1 egg, beaten. Mix with dry ingredients, stirring until just blended. Fold in 1/2 cup dried apricots, chopped; 1/2 cup dried cherries, chopped; 3/4 cup pecans, chopped. Spread batter in a lightly oiled and floured 9X5" loaf pan. Bake at 350 degrees for 50 minutes to 1 hour, or until bread tests done. Remove loaf from pan and cool on wire rack.
Tip ***Write a holiday greeting on a big mug using enamel glass paint. After paint has dried, fill the mug with chocolate covered spoons, peppermint sticks or Flavored tea bags ...a warm and thoughtful winter gift***
