Nutty Butterscotch Squares -makes 2 dozen
Combine 2 cups all purpose flour, 1 cup brown sugar, packed, 1 cup butter, melted, 1 tbsp vanilla extract, 1/4 tbsp salt, and 1 egg yolk. Press into ungreased 13X9" baking pan. Bake at 350 degrees for 25 minutes; set aside to cool. Heat a 12 ounce package of butterscotch chips, 1/3 cup corn syrup, and 1/4 cup butter together in a double boiler until melted and smooth. Pour over crust. Sprinkle nuts (1/2 cup chopped walnuts; 1/2 cup chopped pecans; 1/2 cup chopped macadamia nuts) over the top, pressing gently into melted mixture. Refrigerate until firm, at least 1 hour; slice into bars to serve
