Chicken & Spinach Enchiladas:

1 box frozen chopped spinach

1 lb. chicken, cooked & chopped

1 pkg. McCormick Enchilada Seasoning

14 oz. can tomato sauce

14 oz. can diced tomatoes

tortilla shells

shredded cheddar cheese

pepper jack cheese, shredded

Cook spinach. Heat oven to 350 degrees. Heat enchilada seasoning with tomato sauce & diced tomatoes in a large sauce pan. Reserve 1 cup of sauce. Add chicken and well-drained spinach to the remaining sauce in the pan. Wrap chicken & spinach mixture in tortillas with cheeses and place in 8x8 pan. Cover with remaining sauce and extra cheese. Bake uncovered for 20 minutes. Makes 6-8 enchiladas.

Creamy Italian Chicken:

3 chicken breasts, cooked & cubed

1/2 c. chopped onion

1 sm. can mushroom pieces

1 pkg. Italian dressing mix

1/4 c. water

8 oz. pkg cream cheese

1 can cream of chicken soup

1 box angel hair pasta

Saute onion & mushrooms in a little bit of oil in a small skillet. Put chicken, onion, mushrooms, dressing mix and water in crockpot on low for 3 hours. Add cream cheese & soup, cook for an additional hour. Serve over angel hair pasta, cooked according to directions on the box.
